Chocolate
mousse

Preparation time: 20 minutes + 4 hours in the fridge

Ingredients (for 4 persons):

  • 150gs dark chocolate 

  • 4 eggs 

  • 30g sugar 

  • 1 vanilla pods

  • 1 pinch of salt

  • Strawberries or berries (optional)

Utensils:

  • 2 mixing bowls

  • A whisk

  • A spatula

  • A sauce pan

Use a good quality of chocolate to get nice flavours. You can also add some whipped cream on the top.

Step-by-step recipe:

  1. Melt the chocolate in a bain marie and add the vanilla pods.

  2. Separate the egg yolks from the whites

  3. Whisk the egg whites with a pinch of salt until you get a soft peak.

  4. In the other bowl, whisk the egg yolks and the sugar. Combine until you get a light yellow colour with a smooth texture. Add the melted chocolate.

  5. Fold your white (Blanc en neige) into the egg and sugar mix.

  6. Set in a container and leave it in the fridge for minimum 4 hours.
